Amazing Creamy & Sugar-Free Chocolate Mousse
Have you used monkfruit sweeteners yet?
It's the sugar-free equivalent of granulated sugar! I usually use dates as as sweetener (and have provided that option as well), but if you need something lower in calories, or sugar free, this might fit the bill! Topped with our low-sugar date-sweetened granola you'll have a nice guilt-free dessert or snack!
Be sure to make this in advance to chill to thicken before serving.
Amazing Creamy & Sugar-Free Chocolate Mousse
MAKES: 2 1/2 cups
½ cup raw cashews
1/4 cup cacao or cocoa powder
about ¼ cup nondairy milk (just as needed)
½ teaspoon vanilla
¼ cup monk fruit sweetener (or 3-4 pitted dates)
1 12-ounce container silken tofu (shelf stable), drained well.
- Blend all ingredients until smooth, adding liquid (the milk) only as needed to get a smooth consistency.
- Pour into a covered container. Chill for a few hours to thicken.
- Serve with fresh/frozen fruit and Tracy's Real Foods Buckwheat Granola of choice, or a mix of flavors :)
CHEF’S NOTE: If not using a hi-speed blender, soak the cashews for 4 or more hours to soften and drain well. Also, reduce the milk to 2 tablespoons.
