Cherry Nirvana Cacao Crunch Nice Cream
Whenever we make a quick Nice Cream for dessert we wonder why we ever even purchased store-bought ice cream, vegan or otherwise! Making your own from frozen bananas is SO DELICIOUS, CREAMY, HEALTHY (as in guilt-free) and LOW-CALORIE/FAT and of course much much LESS COSTLY (there's really no comparison!). It's absolutely AMAZING when topped with our delicious COCONUT CACAO CRUNCH GRANOLA.

Our latest concoction was inspired by our friend PCRM's Jill Eckart.
Cherry Nirvana Cacao Crunch Nice Cream
Makes 2-3 servings
3 cups frozen banana slices -OR 1/2 fresh banana + 2.5 cups frozen bananas (see CHEF'S NOTE)
1/2 cup frozen cherries or 1/4 cup soaked/drained dried tart cherries, saving 2-3 cherries for garnish
2-3 tablespoons cacao (or cocoa) powder
1/3 cup Tracy's Real Foods Coconut Cacao Crunch Granola (link above).
1. For easy blending, use some fresh bananas as shown in the video or remove 1 cup of the frozen bananas from the freezer and allow them to thaw for about 10-15 minutes or until softened, but still frozen (you can also microwave them if you are in a big hurry.
2. Place the thawed bananas along with the cherries into a high-speed blender, then top with the remaining frozen bananas.
3. Blend until smooth. Then scoop into serving bowls.
4. Top each serving with a generous sprinkle of Coconut Cacao Raw Buckwheat Granola and place a reserved cherry on top! Enjoy your treat with zero guilt!
CHEF'S NOTE:
There are two ways to make for easier, faster blending. These are good tips to know because you're going to want to enjoy this often! a. Thawed bananas - The reason for thawing some of the banana is for ease of blending, and avoiding adding some liquid which can result in a soupy nice cream. b. Fresh bananas - If you happen to have a ripe, unfrozen banana on hand you can place about 1/2 of it on the bottom of the blender (first) along with the cherries, then follow that with frozen bananas - it blends FAST and smooth!
