DATE SWEETENED PLANT WHIP AND VANILLA FROSTING

Need I say more? Holidays can be tough when trying to eat healthy! 

But over the years I have perfected a few yummy recipes that I can share with you to make your holiday desserts not only delicious, but good for your body as well!

PLANT WHIP

This is an excellent topping for pies, crumbles, Berry Oat Bars, fruit etc., and it also makes a nice vanilla frosting! 

(makes about 1½ cups)

1 cup firm (not super firm) tofu, drained 

1 cup cashews, soaked 

¼ cup dates or ½ cup date paste (recipe on page xxx)

2 teaspoons vanilla

1 tablespoon date or maple syrup (optional)

¼ teaspoon salt (optional) 

METHOD

Place all ingredients in a blender and blend until smooth

Chill very well before serving. 

Plant Whip tends to thicken as chilled so you can whip it up with a bit of plant milk to thin. Left thick, it makes an awesome creamy frosting.

VANILLA FROSTING 

This is such a yummy substitute for the usual high-fat, high-sugar vanilla frosting. 

1 cup raw cashew nuts

½ cup plant milk

¼ cup pitted dates

1 teaspoon vanilla

¼ teaspoon salt (optional) 

METHOD

Add all ingredients to high-powered blender and puree until very smooth. Place in a covered container and chill to thicken before frosting.
