Salted Caramel Pudding

Makes about 3 cups

This is a delicious, seasonal (or any time) treat! Feel free to spice it up to change it up (with cinnamon, pumpkin pie spice, etc), or enjoy it as is. Why not have it for breakfast with some fruit and crunchy granola? You can sub any plant milk for the water and hemp seeds if you like, but we like using hemp seeds to get a great source of protein and omega-3s! 

2-3 small yams (orange fleshed sweet potatoes) – about 2 cups cooked

1/2 cup pitted dates or date pieces

3/4 cup water

1/2 cup hemp seeds

1/2 tablespoon vanilla

1/4 teaspoon salt

1.     Preheat the oven to 375

2.     Scrub the yams well and place them on a parchment lined sheet. Roast them in the oven until very soft and caramelized (about 30-40 minutes). Allow them to cool for about 20 minutes.

3.     In a high-speed blender, place all of the ingredients. If the dates are dry, push them down and allow them to soak in the liquid for about ½ before blending.

4.     Blend until very smooth.

5.     Enjoy immediately or chill.

6.     This is also great as an ice cream, frozen solid and blended in a Ninja Creami the next day!
