Hummus Balsamic Dressing

Our favorite lunch for a busy day! We feel SO great when we have this type of lunch. Always include beans, grains, fresh veggies! 

This time it's: 

Anti-Inflammatory Quinoa, arugula, cannellini beans, fresh veggies and a Hummus Balsamic Dressing! 

AND a great treat addition to any meal: Some oil-free roasted Parmesan Yukon Gold Potatoes! I try to keep cooked potatoes on-hand to make these whenever we want to add some delicious complex carbs. It's yummy with date paste (recipe linked below) or you can add whole dates and use a blender. 

Hummus Balsamic Dressing

1/4 cup balsamic vinegar

1/4 cup hummus

1 tablespoon Dijon

1 tablespoon Date Paste or maple syrup

1 tablespoon nutritional yeast

Ground pepper to taste 

Add it all to a jar and shake/stir well.
