CHICKEN-FREE NUGGETS
ENJOY THESE CRUELTY-FREE HEALTHY VERSIONS OF A FAVORITE SNACK. THEY'RE EASY TO MAKE AND GREAT LEFT-OVER!
1 Package extra firm tofu
1 tablespoon water or Braggs Aminos or soy sauce
2 tablespoons almond flour or arrowroot flour
2 tablespoons Chicken-Free Seasoning
dipping sauce - optional (can be bbq sauce, ketchup, Tofu-Cashew Mayo (recipe in this blog) mixed with sriracha or stone ground mustard. Many possibilities.
1. Preheat the oven to 425.
2. Line a cooking sheet with parchment paper
3. Cut the tofu into cubes and place in a large bowl.
4. Toss with water or Braggs to moisten and help the spices stick to the tofu
5. Sprinkle the tofu with the Chicken-Free Seasoning and almond flour. Toss the tofu gently again and be sure they're all coated.
6. Place the tofu cubes spread apart on the cookie sheet
7. Bake for a total of 25 - 30 minutes, turning the tofu once or twice during cooking.
8. Enjoy plain, with a dipping sauce, or as a side with your main dish or with salad. These are also great in a stir fry!
ROASTED SWEET POTATO MEDALLIONS
Note - you can use a very similar method with white potatoes. Delicious! Other vegetables likely will not need presteaming to soften first.
2 Small sweet potatoes, sliced and steamed until just barely tender then cooled
1 tablespoon water
2 tablespoons almond flour or arrowroot flour
2 tablespoons Chicken-Free Seasoning
dipping sauce - optional (can be bbq sauce, ketchup, Tofu-Cashew Mayo mixed with sriracha or stone ground mustard. Many possibilities.

4. Toss with water to moisten and help the spices stick to the potato
5. Toss the potatoes gently again with the Chicken-Free Seasoning
6. Place the potatoes slices spread apart on the cookie sheet
7. Bake for a total of 25 - 30 minutes, turning them once or twice during cooking.
8. Enjoy plain, with a dipping sauce, or as a side with your main dish or with salad.
