OIL-FREE VEGAN "FRIED CHICKEN"

OIL-FREE VEGAN

This recipe uses Butler Soy Curls! I get them from Azure Standard, but they are available in some stores (like San Diego Vegan Market), from Butler Foods and on Amazon. 

It's great on salads, in sandwiches and plain as a snack!

OIL-FREE VEGAN "FRIED CHICKEN"

2 cups Butler soy curls

1.5 - 2 cups water 

1 tablespoon Tracy's REAL Foods Chicken Free Seasoning 

1 tablespoon plain non-dairy yogurt, sour cream or Tofu Cashew Mayo or use 2 1/2 teaspoons non-dairy milk and 1/2 teaspoon lemon juice or apple cider vinegar

1 tablespoon non-dairy milk or hot sauce (if you like it spicy) 

1 tablespoon corn meal

2 tablespoons Tracy's REAL Foods Sunny Parm 

3 tablespoons oat flour (or any flour)

1/2 teaspoon poultry seasoning

other seasonings to taste (like onion/garlic powder, chipotle powder, smoked paprika, chili lime seasoning, salt, pepper etc). 

INSTRUCTIONS 

1. Put the soy curls in a saucepan and add water to just barely cover the curls, and stir in the Chicken Free Seasoning. Bring to a boil, pushing the soy curls to immerse fully in the broth. Reduce to medium, rolling boil and allow the liquid to reduce/boil down until mostly gone, then drain through a colander or sieve and use a large spoon to press out excess moisture and allow the soy curls to cool a bit. 

2. Preheat the oven to 400 (or preheat an air fryer to 400 or 425 according to directions) & line a large cookie sheet (or two smaller ones) with parchment paper. 

3. Combine the yogurt and non-dairy milk in a large bowl. 

4. Combine the remaining ingredients in a small bowl.

5. Pour the drained soy curls into the large bowl and toss with the yogurt mixture to coat all. 

6.  Sprinkle on the dry ingredients and stir to coat them completely. 

7, Pour the mixture onto the paper and spred them out so they aren't touching one another. 

8. Bake for 12 minutes then turn them and cook for 5-10 minutes more until crispy. 

9. Serve alone, with a dipping sauce, in wraps, or on a salad, or in Mexican dishes. The sky is the limit! Also try tossing them with your favorite BBQ or buffalo sauce and putting them back in the oven for another variation on this tasty treat.
